Hello,
When I send this plain text email, with the following subject line : "Répondre xxx #today *projectxxx", I get the following task : "=?iso-8859-1?Q?R=E9pondre_www_#today_*projectxxx?="
As you can see, I use accented characters from time to time.
I am using Outlook and a plain vanilla SMTP server, with no redirections whatsoever.
What might be the problem?

It could be the way Outlook is encoding the email. If you can adjust your settings to turn "Quoted Printable Encoding" off, that should fix the problem.
