Can Creation, Modification and Completion Date/Time Stamps be made visible sortable columns?

If I had to choose one it would be Completion Date/Time Stamp column.

They are - but only under Main/Recently...

You can Sort by the hidden fields: "Date Added", "Date Modified", "Date Completed".

When you sort by any of these fields, they become visible.

I hope for a future request where Date and Time could be in the Show Fields list.
