I've got a number of repeating tasks that I want to delete - not just skip an occurrence, but outright delete.

As far as I can tell, the only way to do that is to (individually) first undo the "repeat" choice (which means multiple button-clicks or typing "none" into a finicky little box), then marking the task complete (even though I didn't actually do it today - I just want it to go away).

Is this right? Is it supposed to take this much work to make a task go away? Or have I missed a useful little tool that would make this easier?

If you delete an uncompleted repeating task, the task is gone, but previously completed instances will remain in your task list.

To outright delete a task, click on the action icon (circle with arrow in it) and click "Delete". It will remove the current version of the task and prevent future occurrences.
