When I assign a task to a Collaborator it pulls up their folder list on their workspace and makes me assign it to one of their folders. I would rather the task be saved in my workspace with a column showing who(if anyone) is responsible for that tasks. This seems like it would allow me to better actively manage tasks and projects. Is there a way to do this?

There is not currently a way to assign a task to someone and keep it in your todo list. You may want to look at "Joint tasks". This is is a way to create a task and then share it with someone so that it appears on each person's todo list. You could then use the "tag" or some other attribute to indicate that the task is assigned to them and that you are just observing it.
