with all of the amazing categorizations available in toodledo (ie context, folders, goals etc) why is it when you go to export your info, none of these options are available and you just get your tasks in a big long list

Which export are you using?
Toodledo's export options are some of the best I have seen for a site like this. The XML export supports pretty much every field, and even subtasks. I believe the CSV export also contains every field. The Test export only has a few fields, but is not simply a big list of tasks. The only other export I know of is the iCal export. If that is what you tried, use one of the others:

thanks anders. is there a way to export a single folder or context or goal or day. also is there a way to determine the order of the information (ie columns) when exported?

The only partial export available is to send yourself a Folder by email: https://www.toodledo.com/connect_email.php
That will send you a fairly simple list of tasks from a single Folder with a few fields including Priority, Due Date, Length I believe, and possibly others.

If you use the CSV export, and you know how to work with spreadsheets, then isolating a particular folder, context, date, etc. is fairly easy to do by sorting the spreadsheet, and cropping of what you don't want. Also, you can't determine the export file's order, but again it should be fairly easy to do that in a spreadsheet program. Just make sure that you set the correct columns for the correct fields during import. They don't have to be in the correct order, but you must choose the right fields from a dropdown menu when you import.

Like Anders said, the CSV option can be read with Excel and then processed in any way that you want. We are also planning to add folder/context/etc export options in a future update.
