ipod touch use offline?

Before I buy the iphone/ipod/ipad app, I wanted to make sure that the app works offline (away from wifi connection) on the ipod touch. That is, does the app store tasks that are in the system and allow tasks to be added/modified while you're offline then sync up when you connect? Sorry if this has been asked before; I searched the forum posts and didn't find this specific topic. Thanks in advance!
