I would like to avoid showing tasks with a due date that is more than a month away, for example taxes
the "future tasks" filter doesn't appear to do anything and playing with the start date also didn't seem to help
apologies in advance if this is an obvious question

You can control how far in the future tasks are hidden in your account settings. You can also use a start-date in the future. Im not sure why it didn't work when you tried it. Here is more info:
