Is there a way to make the Tasks Note Field to NOT automatically display? I would like to see it only if I choose to.

Actually, yes there is. Just click "Hide Notes" at the top of the list.

Sorry, my mistake, I live in multi-line mode, and Hide Notes is not an option because they are already hidden if tasks are collapsed.

Oh, right. It isn't currently possible to hide the note but display the rest of the details in multi-line mode.
