Is there any simple way to have some tasks hidden until they are due?

I.e. I would like to set a task in the future with a due date and a negative priority for instance, and only have that task appear in the todo list when it becomes due or is overdue.

Any ideas?

Have you tried Filters (top of the page on right side)? You can hide by -1 priority or by future date.

It's a global setting though, so if your goal is to only affect some tasks, then it may not work for you.

That's the purpose of the Start field. You can set Start dates for your tasks, which can be the same as the Due Date, and then filter appropriately.

Of course, if you only have tasks taking one day or less, you could do the same thing with only Due Dates.

If you check the Help screens for Searches, you'll find lots of help.
