If you don't want your data stored in the cloud, then you should turn off syncing entirely. But to answer your questions, syncing is over Wifi only, but you can backup your data over USB via iTunes.

So, the task's no longer show the wrong tag, but the tags are still appearing as tabs on the top of the screen on the tag view? Is that correct? If so, what do you see when you click on one of those tabs?
